Something Different: Princess Peach

Peaches in the Annapolis Valley were incredibly luscious this summer.  Sweet, opulent, juices running down your arm as you feast on the sweet ephemeral flesh.  I honestly couldn’t stop eating them.  Neither could my kids.  I spent a personal fruit fortune on peaches and nectarines this year but it was worth the price.  Nothing epitomizes summer as much as a peach for me.  So, we made a peach cider.  We started by fermenting a base from two different treatments of skin-contact Red Jonagold apple juice with a touch of stone fruit forward hops; just a hint, for a bit of depth.  As this rich apple juice fermented away on its skins, we made a peach syrup by adding sugar to literally thousands of pounds of peach purée (fruit grown and milled right down the road) and allowing the osmotic force of that combination to extract all those beautiful peach aromas and flavours.  And I think we sort of captured it, there is this smokey peach background, that evolves into peach pie and peach candies.  The candy lingers but carries along the fresh and baked peach notes.  It’s literally like a perfect peach harmony, each aspect carrying it’s own peachy song that lingers so incredibly long.  It’s a fun, sumptuous, indulgent peach experience that finishes very cleanly despite being on the sweeter side.
